I will break yesterdays cook down. Once again I did not get a plated pic. Here we go...



This was pretty simple grill anyone could do this so give it a try.


I did 3 Chuck Roasts.Time would be the same for one. I seasoned all of them the same. Just a seasoning salt. I did not rub in just dowsed them. The one one left I put slivers of garlic inside the roast in random locations. The middle one I simply put them on top. Roast on left I injected with beef broth and garlic.

Then I put them on grill indirect heat. [note: I did sear off the bottom just a bit for some marks taste and texture] Temp was around 250 I threw on some mesquite wood for some smoke. [this is optional] Cooked for 1Hr 15min.

After the 1hr and 15min I wrapped them up threw on more coals.

The reason I wrapped them is so I could cook for another 2hrs or temp hits 195 degrees and to collect the juices for Au Jus . After wrapped and back on I went to prep veggies.

Now I cut the veggies up into around 1/4 in thick for carrots and cut up the potatoes into 1/2x1/2 inch pieces. I made to separate pouches for each. Added some extra virgin olive oil and butter to both. I did season the potatoes. Now with the Roasts wrapped I could throw more wood on for the veggies a bit before closing the pouches to fully cook.

Cook meat to 195 degrees before pulling. Should take 2 to 2.5 hrs after wrapping. Depends on heat. Cook veggies til done.

Sweated out some mushrooms then added some butter to cook to almost a brown butter. Collected the Au Jus also served with warmed BBQ sauce.

Roast looks awesome! I love a left over roast beef sandwich - real roast beef, not pre sliced/package.

I have thought and have decided. The next Throw Down will be Oct 18-20.

This cook must have pastry or a do. Be it Pizza,Bread,Beefwellington,Shepherds pie ect . Any questions please post them.

I cooked a Ham yesterday. I did not intend to make video otherwise I would have had better production. But you will get the jist of it.

Okay this is the weekend. I hope you all remembered. If not i will be leaving the submissions up untill tuesday then post a poll tuesday evening. I have and Idea for my entry. and hope to see others.




This is last weekends cook. Finally got some free time to edit.

Well this one was tough for me. I reached for the stars but did not quite get there. I will say these are very good. But can be better. I will have to work on this one.
